MICROWAVE HOLLANDAISE SAUCE

Cooking Time: 2 minutes
Utensil: 2-cup glass measuring cup
Makes 2/3 cup

1/4 cup butter
1 (scant) Tablespoon lemon juice
2 egg yolks, beaten
2 Tablespoons light cream
1/2 teaspoon dry mustard
1/4 teaspon salt
dash Tabasco

Place butter in a 2-cup glass measure.  Microwave on 
High 1 to 1 1/2 minutes. Stir in lemon juice, egg 
yolks, cream, mustard, salt and Tabasco. Microwave on 
High 1 minute, stirring every 15 seconds. Beat with a 
wire wisk until smooth. Sauce can be reheated on High 
1 minute.
